Puerquitos - Marranitos
Puerquitos...Marranitos ~ masas quebradas crujientes (crispy shortbread dough) 🇲🇽 pan dulce...this whole wheat 🌾 pastry is sweetened with dark molasses and brown sugar providing increased moisture...it contains pork lard enhanced with vanilla notes. Chemically leavened with baking powder and additional baking soda to provide not only volume but the alkaline notes and a darker crumb structure. Ironically both ingredient attributes are found in the old Chinese almond cookie recipes. The piggy’s are brushed with a “double” egg wash to provide the rippled sheen and final presentation of the decadent Marranitos 🐖
