Concha Blanca, Concha Chocolate
Conchas 🇲🇽 ~ masas fermentadas ~ bizcocho...the dough is similar to that of a French 🇫🇷 brioche with the addition of coarse ground cinnamon. The concha gets its name from the cookie-like topping that is prematurely stamped, then proofed to resemble a “seashell.” Although the application of sugar topping over the dough remains a mystery... with traces to Japan 🇯🇵 where a similar concept is known as “melonpan.” Interesting enough both civilizations preferred their given starches of corn🌽 and rice 🍚 before the Spanish and Portuguese invasions of the early 1500s 🤔 The sole reason behind yesterday’s bake was to take that picture of the conchas at their maximum volume...during the bake 😉
