Polvorón Tricolor 🇲🇽 ~ masas quebradas crujientes (crispy shortbread dough)...inspired by the colors of the Mexican flag this sugar cookie is flavored with vanilla notes and united with an egg wash. Shaped into a triangular strip using dusting flour and precision before cutting into medallions....baked at a low 320F to provide a symmetrical spread while maintaining the bright white finish. The polvorón can be transformed by switching out the colors to pink, yellow and chocolate and is referred to as a payaso 🤡. The Neapolitan colored cookie is popular all year round where the tricolor is typically celebrated during Mexico’s independence - September 16th.
