Chilindrinas, Cuerno Bizcocho
🇲🇽 Bizcocho ~ masas fermentadas (fermented doughs)...pan dulce contains over 4000 different varieties all tracing back to the 5 categories and their given regions.
Bizcocho or pan de huevo as referred to in the northern states of Mexico is a sweet enriched dough with coarse ground cinnamon and vanilla notes. Showcased are the “chilindrinas” dressed with a yellow sugar topping and rock sugar decorations. Chilindrina is in reference to crybaby or raggedy little girl with freckles which is represented by the rock sugar. The “limones” or “limas” are also decorated with a yellow sugar topping and identified by the protruding stem then dusted with sugar. The “melones” are left bare with only a yellow sugar strip and topped with rock sugar. Finally the “cuerno bizcocho” is rolled out then extended before applying the milky cookie topping. Generously brushed with egg wash and decorated with sesame seeds the cuerno bizcocho is a true representation of the magic behind the Mexican bread showcase 🙏
