It was always during the holiday season where membrillo or quince made it’s annual debut in the empanada showcase at my family’s old bakery. Membrillo strips are one of the main and key components used to decorate the Rosca de Reyes, which is on the forecast every December.

Pan Fino dough has the ideal extensibility to encapsulate the fillings of an empanada. Empanadas made using this #cinnamon short-dough can range from a variety of fillings including #calabaza, #guayaba, #piña or in some cases #custard or #crema. The cookie-like crust compliments the fillings and creates a delectable synthesis between the two.

The empanadas de membrillo bring hints of apple, pear and citrus to any holiday platter.
