This decadent #brownie, was the center of attention during my #foodservice days. Coconut #macaroons and brownie mixes, filled with raspberry donut filling, were all showcased during those demos.
Today, we made them all from scratch....
Coconut Macaroon š„„
14 ounce can - sweetened condensed milk
14 ounce package - flaked coconut
1/4 cup - toasted, sliced almonds
Instructions
Blend all ingredients until smooth, this can be made ahead of time (set aside).
Strawberry Filling š
1 cup - fresh strawberries (stem removed and washed)
1/2 cup - granulated sugar
1/3 cup - water
3 tsp - cornstarch
Instructions
Slice strawberries and toss in sugar.
Add to medium saucepan, using high heat, sautƩ until sugar melts.
Add cornstarch to coat strawberries.
Add water and bring to a boil, reduce heat and simmer for 15 minutes, or until the strawberries breakdown into a jam consistency.
If using a #thermomix, use the thicken mode.
Gourmet Almond Brownie
1 cup - fine almond flour
2/3 cup - granulated sugar
1/4 cup - dutch cocoa
1/3 cup - melted butter
1 tsp - baking powder
1/2 tsp - salt
2 - eggs
1 tsp - vanilla extract
Instructions
Mix ingredients together, until well-incorporated (let sit for 10 minutes).
Spread onto baking sheet, bake at 350F for 20-25 minutes (variable).
The dessert is built in five stages ...
Evenly spread macaroon cookie dough onto a parchment-lined, 9āx13ā dish, then place in freezer for 10 minutes.
Evenly spread strawberry filling and place back in freezer for 10 minutes.
Pour and spread the brownie batter onto strawberry filling, then bake for 30-35 minutes at 350F.
Place in freezer overnight.
Using a spatula, carefully remove from pan. Invert, slice, and decorate as desired.
The three gooey layers define decadent and make for the perfect, mid-February or Valentineās Day dessert. ā„ļøš
