Rosca de Reyes Almendrado
Rosca de Reyes, almendrado ~ masas fermentadas (#fermented #dough)
Today we included an almond paste filling to our Rosca de Reyes. This filling is used to fill bear claws and other delicious Danish items.
Almond Filling Recipe 👉🏾
120 g granulated sugar
120 g unsalted butter
100 g almond paste
60 ml water
10 ml almond emulsion (optional)
Mix all ingredients to form a paste.
Can be mixed and refrigerated for up to 2 weeks before using.
The almond filling is piped and rolled into the sweet dough. Decorated with sliced almonds and glazed cherries.
This is probably one of my favorite roscas. Might be because I love bear claws. 😆lol
