Polvorón de Limón
Polvorón de Boda 🇲🇽~ masas quebradas crujientes…dusted with confectioner’s sugar or azucar glass, the Mexican Wedding Cookie represents the purity of a clean slate or canvas. Crumbling back to its Moorish origin and during the “Golden Age,” the polvorón is described as a brittle, powdered shortbread, or cookie. These polvorónes can be crafted into different shapes, typically rounded, and baked off to create a dome shaped, fairy tale bridal gown. Today we cut them into thin medallions… the extended, crisp surface is easier for stacking. The addition of Persian lime juice and vanilla notes provides a distinct citrus experience that compliments the toasted walnuts.
