Devils Food Cake filled with a raspberry mousse and draped in milk chocolate ganache. Topped with berries and dusted with confectioners sugar and gold dust for a final bling.
The Devils Food Cake originated in the Southern U.S. 🇺🇸 and gets its name from the dark rich color and devilish red tint. The cake was not launched in cake mixes until the 1930s, where home baking was streamlined with off the shelf baking options for the #homebaker 👩🏾🍳👨🏻🍳👩🏽🍳🧑🏻🍳👨🏼🍳
The acidity from the raspberries compliment the reaction between the buttermilk, chocolate and alkalinity of the baking soda. This reaction also provides a red tint to the crumb of the #chocolate #cake 🎂
Sliced in three layers, the cake is then filled using a piping bag filled with #raspberry #mousse. The raspberries are then carefully sliced into fourths and placed diligently between the valley of mousse. The raspberry mousse helps bind the #layers and serves as a crumb coat before freezing overnight. The cake is then draped with a #ganache that creates a chocolate 🍫 truffle-like crust.
This devils food cake is definitely worth the second slice or in many cases three. 😉
