Bleu Cheese Twists . . . the cheesy laminated dough contains 50% sour starter and 25% blue cheese as a butter block replacement. The twists are then refrigerated overnight where the fermented notes continue to bloom. 8-10 hours later they are removed from the refrigerator then brought to ambient temperature before brushing with an olive oil and more blue cheese for final presentation. Toast points are a result of the fermented dough and a high baking temperature of 420*F. . . Just add wine 🍷
